2 cups cooked sweet potato (yams)
1/3 cup light brown sugar ½ teaspoon nutmeg ½ cup cream or milk 3 tablespoons butter or margarine ½ teaspoon salt 2 eggs, separate yolks from whites ½ teaspoon cinnamon 1 small package mini marshmallows, optional In large mixing bowl, add mashed sweet potatoes, slightly beaten egg yolks,
salt, sugar, and spices. Carefully add cream and stir well. Beat egg whites until very stiff (makes peaks), then fold
into potato mixture. Pour into buttered baking dish. Top with tiny marshmallows and bake at 350 degrees until marshmallows
melt and turn lightly brown. If not using marshmallow, then bake until top is slightly browned.
