New Orleans Pecan Pralines

 New Orleans Pecan Pralines
                                      Makes 12 - 15
 
 1 stick butter or margarine
 1½ cups granulated sugar
 3/4 cup brown sugar
 ½ cup buttermilk
 ½ cup cream, evaporated milk
 1 teaspoon vanilla
 1 cup chopped pecans
 
Melt butter on high heat. Add all sugar, blend with large spoon until sugar is blended. Continue cooking, stirring constantly, until mixture is bubbly. Then add milk and cream, until totally blended. Keep heat on high and continue stirring until you remove from heat. Boil mixture until it reaches soft ball stage. Remove from heat and add vanilla. Stir well with spoon or whisk. Quickly add pecans and stir well. Spoon out onto waxed paper into the size you desire (remember the candy will spread out flat). Let cool completely before eating. Candy will set firm as it cools.
 
NOTE: Use a candy thermometer or just drop a ball of candy into cold water and check for soft ball stage - you can roll it into a soft ball.
