New Orleans Garlic Bread

 New Orleans Garlic Bread
                                  Serves 8 - 12
 
 2 tablespoons extra-light olive oil
 2 sticks butter or margarine
 ¼ cup minced garlic
 1 tablespoon parsley flakes
 ¼ cup Parmesan cheese
 2 large loaves French bread
 
In small pan, heat olive oil, add butter and melt, stirring to blend. Add garlic and parsley, stir to blend. Turn off heat. Slice bread in half, lengthwise. Coat each piece on the inside, lay in single layer and bake at 400 degrees for 5-10 minutes or until top is lightly brown. Remove from oven and sprinkle with cheese, slice and serve.
